"Butch" Welch, a native Idahoan, served twenty-one years as a Conservation
Officer for the Idaho Department of Fish & Game. In the course of his career he
was assigned to various duty stations around the beautiful Gem State. In 1994
the Shikar Safari Club International recognized Welch as Idaho's "Wildlife
Officer of the Year" for his meritorious service in the field of wildlife
conservation and law enforcement!
Cee Dub's stories and recipes come from his years in the back country, both in
the line of duty as well as in the "line of fun". Butch, or as his friends call
him, Cee Dub and his wife Penny enjoy living along the So. Fork of Clearwater
River near Grangeville, Idaho.
Cee Dub has catered "on the side" for many of Idaho's finest, as well as
nationally known folks. His river and hunting trips are legendary and when he is
"camp cook" you can be sure no one goes away hungry!
After 21 years as an Idaho Game Warden, Cee Dub traded in his duty belt for an
apron in September of 1999 when he filmed an additional eighteen shows. The
original eight shows were incorporated with the new ones and the combined 26
shows released in the spring of 2000. The second series introduced Cee Dub's
second book, More Cee Dub's Dutch Oven and Other Camp Cookin'! Now Cee
Dub's has released his third cookbook, Cee Dub's Ethnic & Regional Dutch Oven
Cookin'.
